How to make low carb pizza rolls

These low carb pizza roll ups are so easy to make! First, preheat the oven, and while it’s heating up, work on getting the other ingredients ready. Place parchment paper on a cookie sheet, and then arrange the cheese slices in rows. Next, sprinkle Italian seasoning on each cheese slice. Add two slices of pepperoni per slice, placing them right in the middle.

Once the oven has pre-heated, add the cookie sheet to the oven. Cook for 6-8 minutes, removing when the cheese is brown around the edges and slightly crispy. The roll ups should be ready after 6 minutes, but if you like a crispier roll up, you can cook them up to 8 minutes.

Finally, remove the keto pizza roll ups from the oven, and let them cool for a couple minutes before rolling up. These are ready to eat right away, and you can also store them in the refrigerator for a meal prep option.

Ingredients

  • 10 mozzarella slices
  • 20 pepperoni slices
  • Sprinkle of Italian seasoning on all slices

Instructions

  1. Preheat oven to 400 degrees.
  2. Line a pan with parchment paper, and add cheese slices in rows (if the pan is small, make two batches)
  3. Sprinkle Italian seasoning lightly onto each cheese slice.
  4. Place two slices of pepperoni onto the middle of each cheese slice.
  5. Bake the slices for 6-8 minutes, until the cheese edges are crispy.
  6. Remove the pan from the oven and let the slices cool for at least 2-3 minutes.
  7. Once the slices are cool enough to handle, roll each slice up and serve with a small side of pizza dipping sauce.
