Chocolate Protein Mug Cake

Delicious and easy, this chocolate protein mug cake recipe can be prepared in minutes. Moist and decadent, this microwave mug cake will satisfy a chocolate craving after a long work day or as a post-workout snack.

Over the past few years, I’ve grown to love cake, especially a moist, fluffy, and fudgy one. To satisfy my newfound cake cravings and to help meet my daily protein goals, I experimented with making a microwave mug cake, inspired by a microwave protein cake I found at Trader Joes. Because I don’t have a Trader Joes nearby, I realized I would have to make this recipe once my stock ran out!

Ingredients for a microwave chocolate mug cake

  • Chocolate protein powder — I recommend Equip’s Prime Protein, but you can use your favorite protein powder for this mug cake
  • Oat flour — this recipe features oat flour, which is naturally gluten free and serves as a great base for baked goods. If you are gluten sensitive, make sure to shop for oat flour brands that are certified gluten free.
  • Maple syrup — this natural sweetener adds depth and richness to the chocolate mug cake. I love the 100% organic pure maple syrup for its dark, rich taste.
  • Baking powder, vanilla, salt — these typical cake ingredients will help the mug cake together, helping with flavor, texture, and rise.
  • Greek yogurt and egg whites — both of these will add a few extra grams of protein to this already protein-packed chocolate mug cake
  • Chocolate chips — while the cake is delicious plain, you can add some chocolate chips to the top for extra chocolate-y goodness!

How to make a chocolate protein mug cake in the microwave

While there are a lot of ingredients, this chocolate protein mug cake is actually quite easy to make. It is a dessert that will satisfy chocolate cravings!

In an average sized coffee mug, start by combining the dry ingredients and mix well. Next, add the wet ingredients and stir. Finally, place the mug in the microwave and hit start. The microwaving time will depend on the microwave. My mug cake is cooked in 60 seconds, while some microwaves may need 75-90 seconds. The final texture should look like spongy cake and pull away easily from the mug’s sides.

Ingredients

  • 1 scoop chocolate protein powder (approx. 25 grams)
  • 28 grams oat flour
  • 1/4 tsp. baking soda
  • Dash of salt
  • 1 Tbsp. maple syrup
  • 1/4 tsp. vanilla
  • 1 Tbsp. egg white
  • 2 Tbsp. greek yogurt
  • Chocolate chips (optional — save for after cooking)

Instructions

  1. Select an average-sized coffee mug and add the dry ingredients.
  2. Mix the dry ingredients well, making sure they are evenly mixed.
  3. Add the wet ingredients, and mix well with the dry ingredients.
  4. Microwave for 60-90 seconds (depending on your microwave’s power). 
  5. Add chocolate chips to the top of the cake right when it comes out of the microwave.

Notes

  • Check the mug cake after 60 seconds, but it may take up to 90 for the mug cake to cook. This will depend on your microwave’s strength. The final mug cake will have a spongy cake consistency all the way through and easily pull away from the sides of the cup.
