These bacon-wrapped sweet pepper poppers are an EASY and delicious snack. Stuffed with cream cheese, cheddar cheese, and chicken breast, the sweet peppers are packed with protein. Similar to jalapeno poppers, these sweet pepper poppers are a less spicy version of the yummy treat!

Ingredients to make Pepper Poppers

  • Sweet peppers — Mini sweet peppers are perfect for this recipe, and they are a milder version to the jalapeno popper cousin.
  • Bacon — Wrapping the pepper poppers in bacon not only adds delicious delicious flavor but also more protein. Turkey bacon and regular bacon both work well for this recipe, with turkey bacon being a leaner option.
  • Shredded cheddar cheese — Finely shredded cheddar cheese adds additional texture and flavor to the cream cheese mixture.
  • Chicken — Shredded chicken is the secret protein ingredient in this recipe. While most jalapeno poppers and sweet pepper poppers are only stuffed with cream cheese, this version adds shredded chicken for an added protein boost. This makes this appetizer as filling as a meal! I’ve used a variety of chicken cuts for this recipe, but chicken breast is a lean protein option.

How to make Sweet Pepper Protein Poppers

  1. Wash, clean, and cut the sweet peppers in half.
  2. Prepare the chicken and cheese until a thick mixture forms.
  3. Fill each half sweet pepper with a spoonful of the chicken and cheese mixture. If you have extra mixture left, add more filling to each pepper.
  4. Wrap each sweet pepper with a piece of bacon. I like to use a small bamboo skewer to hold the bacon in place.
  5. Bake in the oven until the bacon is crispy and the peppers are cooked through.

These bacon-wrapped sweet pepper poppers are so delicious both fresh and leftover. Store leftover cream cheese stuffed peppers in the fridge.

Ingredients

  • 8 oz. cream cheese
  • 2 oz. shredded cheddar
  • 4 oz. shredded chicken
  • 1 tsp. onion powder
  • 1 tsp. garlic powder
  • 8 sweet peppers
  • 16 strips of bacon

Instructions

  1. Preheat the oven to 400 degrees.
  2. Prepare the peppers by washing, removing the seeds, and slicing them in half.
  3. Combine the chicken, cream cheese, cheddar cheese, onion powder, and garlic powder. Mix until well combined.
  4. Fill each pepper with a large spoonful of the chicken and cheese mixture. If there is extra mixture left after filling all of the peppers, add more to each pepper until the mixture is gone.
  5. Wrap each stuffed pepper with a slice of bacon. Use a bamboo skewer to hold the bacon on the pepper, if needed. 
  6. Bake 400 degrees for 25 minutes, or until the bacon is crispy and cooked through.
