Sweet Pepper Protein Poppers

These bacon-wrapped sweet pepper poppers are an EASY and delicious snack. Stuffed with cream cheese, cheddar cheese, and chicken breast, the sweet peppers are packed with protein. Similar to jalapeno poppers, these sweet pepper poppers are a milder version of the yummy treat.


Ingredients

  • 8 oz. cream cheese
  • 2 oz. shredded cheddar
  • 4 oz. shredded chicken
  • 1 tsp. onion powder
  • 1 tsp. garlic powder
  • 8 sweet peppers
  • 16 strips of bacon

Instructions

  1. Preheat the oven to 400 degrees.
  2. Prepare the peppers by washing, removing the seeds, and slicing them in half.
  3. Combine the chicken, cream cheese, cheddar cheese, onion powder, and garlic powder. Mix until well combined.
  4. Fill each pepper with a large spoonful of the chicken and cheese mixture. If there is extra mixture left after filling all of the peppers, add more to each pepper until the mixture is gone.
  5. Wrap each stuffed pepper with a slice of bacon. Use a bamboo skewer to hold the bacon on the pepper, if needed. 
  6. Bake 400 degrees for 25 minutes, or until the bacon is crispy and cooked through.
